Antioxidant Activity of Aqueous and Ethanolic Extracts of Coconut (Cocos nucifera) Fruit By-Products

Coconut is widely used as a food source in producing countries, and during consumption, the waste that generated needs to be reduced through by-products processing ensure environmental sustainability. This study aimed assess functionality of (endo- mesocarp) coconuts at early mature stages. The aqueous ethanolic (50 100% ethanol water) extracts coconut were evaluated for DPPH radical scavenging activity subjected linoleic acid-β-carotene system assay contrast with synthetic antioxidants. Ultrasound-producing extract young mesocarp provided highest antioxidant lower IC50 value (117 µg mL−1) than butylhydroxytoluene (BHT, 170 mL−1). Based on assay, exhibited higher (1.25×) tertiary butylhydroquinone (TBHQ, 200 mL−1); comparable butylhydroxyanisole (BHA, 250 Therefore, by-products, particularly mesocarp, can an alternative natural antioxidant.
